Ingredients
- 1 1/2 cups rolled oats
- 3/4 cup all-purpose flour
- 3/4 cup brown sugar
- 1/2 tsp baking soda
- 1/4 tsp salt
- 1/2 cup unsalted butter, melted
- 2 large eggs
- 1 tsp vanilla extract
- 1/2 cup caramel sauce or 15 soft caramel candies, chopped
- Optional: flaky sea salt, for topping
Instructions
- Preheat oven to 350°F (175°C). Line an 8×8-inch pan with parchment paper.
- In a large bowl, stir together oats, flour, brown sugar, baking soda, and salt.
- In a separate bowl, whisk melted butter, eggs, and vanilla. Add to oat mixture and stir until combined.
- Press two-thirds of the dough into the prepared pan to form the base.
- Drizzle caramel sauce or scatter chopped caramel candies evenly over the base.
- Drop the remaining dough in clumps over the caramel, gently pressing to create a rustic top.
- Sprinkle with sea salt if desired.
- Bake for 18–22 minutes until golden on top and caramel is bubbling at the edges.
- Cool completely in pan before lifting out and cutting into squares.

- For a nutty twist, add chopped pecans or walnuts to the dough.
- Drizzle cooled bars with melted chocolate for added richness.
