Ingredients
- 1.5 lbs boneless, skinless chicken breasts or thighs, cut into bite-sized pieces
- 1/2 cup cornstarch
- Salt and pepper to taste
- 2–3 tbsp vegetable or canola oil (for frying)
- 2 cloves garlic, minced
- 1/2 cup sweet chili sauce
- 1 tbsp soy sauce
- 1 tbsp rice vinegar or lime juice
- Optional: chopped green onions and sesame seeds for garnish
Instructions
- Season chicken with salt and pepper, then toss in cornstarch until well coated.
- Heat oil in a large skillet or wok over medium-high heat. Cook chicken in batches until golden brown and cooked through. Remove and set aside.
- In the same pan, sauté garlic for 30 seconds until fragrant.
- Add sweet chili sauce, soy sauce, and rice vinegar or lime juice. Stir and let simmer for 1–2 minutes.
- Return chicken to the pan and toss to coat in the sauce. Cook for another 1–2 minutes until heated through.
- Serve hot, garnished with green onions and sesame seeds if desired.
