Ingredients
- ½ cup (1 stick) unsalted butter, melted
- 1 cup packed light brown sugar
- 1 can (20 oz) pineapple slices in juice (reserve juice)
- Maraschino cherries (optional)
- 1 cup (2 sticks) unsalted butter, softened
- 2 cups granulated sugar
- 4 large eggs, room temperature
- 3 cups all-purpose flour
- ½ teaspoon baking powder
- ½ teaspoon salt
- 1 cup sour cream (or buttermilk)
- ¼ cup reserved pineapple juice
- 2 teaspoons vanilla extract
Instructions
- Preheat oven to 325°F (165°C). Grease and flour a 10-inch bundt pan.
- Pour melted butter into the pan and sprinkle brown sugar evenly over it.
- Arrange pineapple slices on top of the sugar-butter mixture. Place a maraschino cherry in each center if desired.
- In a large bowl, cream softened butter and granulated sugar until light and fluffy (about 5 minutes).
- Add eggs one at a time, beating well after each addition.
- In a separate bowl, whisk together flour, baking powder, and salt.
- Add dry ingredients to the butter mixture in thirds, alternating with sour cream and pineapple juice. Mix just until combined.
- Stir in vanilla extract.
- Spoon batter over pineapple topping in the pan and spread evenly.
- Bake for 70–80 minutes, or until a toothpick inserted comes out clean.
- Cool in the pan for 15 minutes, then invert onto a serving plate while still warm.
