Ingredients

For the Roasted Grapes
3 cups seedless red grapes
2 sprigs fresh thyme, plus extra leaves for garnish
2 teaspoons fennel seeds
2 tablespoons olive oil
Kosher salt, to taste
Freshly ground black pepper, to taste
For the Whipped Feta
1 cup feta cheese, softened
½ cup ricotta cheese
2 teaspoons lemon zest
1 tablespoon olive oil
Kosher salt and black pepper, to taste
For Assembly
16 slices baguette, toasted
Pure honey, for drizzling
Fresh thyme leaves, for garnish

Instructions

Step 1: Roast the Grapes
Preheat the oven to 425°F (220°C).
On a small rimmed baking sheet, toss together the grapes, thyme sprigs, fennel seeds, and 2 tablespoons olive oil.
Season with kosher salt and black pepper.
Roast for 20–25 minutes, or until the grapes are slightly deflated and beginning to caramelize.
Remove from the oven and allow to cool slightly.
Step 2: Prepare the Whipped Feta
In a food processor, combine the feta, ricotta, lemon zest, and remaining tablespoon of olive oil.
Blend until smooth and creamy.
Season with salt and pepper to taste.
Step 3: Assemble the Crostini
Spread a generous layer of whipped feta mixture onto each toasted baguette slice.
Top evenly with the roasted grapes.
Step 4: Garnish and Serve
Sprinkle with fresh thyme leaves.
Drizzle lightly with honey.
Serve immediately.
