Ingredients

For the Salad
3 large ripe peaches, sliced
1 ball burrata cheese, drained from liquid
1 Lebanese cucumber, sliced
3/4 cup fresh basil leaves
1/4 cup fresh thyme leaves
Zest of 1 lemon
For the Dressing
Juice of 1 lemon
1 tsp malt vinegar
3 tbsp olive oil
1/2 tbsp honey
1/4 tsp flaky salt
1/4 tsp freshly ground black pepper

Instructions

Slice peaches and cucumber into bite-sized pieces.
Arrange peaches, cucumber, and burrata on a serving plate or platter.
Tear burrata gently to let the creamy center spill slightly over the fruit.
Scatter fresh basil, thyme leaves, and lemon zest over the salad.
In a small bowl, whisk together lemon juice, malt vinegar, olive oil, honey, salt, and black pepper.
Drizzle dressing evenly over the salad just before serving.
Serve immediately while fresh and chilled.

Notes

Use very ripe peaches for the best sweetness and juiciness.
Burrata is best served at room temperature for maximum creaminess.
Add prosciutto for a savory variation.
Swap thyme with mint for a fresher herbal flavor.
Assemble just before serving to keep textures fresh.
