Ingredients

For the Chicken Meatballs
1 lb ground chicken
1/2 cup breadcrumbs (panko or regular)
1 egg
1/4 cup grated Parmesan cheese
2 cloves garlic, minced
1/2 tsp salt
1/4 tsp black pepper
1/4 tsp dried thyme
2 tbsp olive oil
For the Creamy Mushroom Sauce
2 tbsp butter
8 oz mushrooms, sliced
2 cloves garlic, minced
1 cup heavy cream
1/2 cup chicken broth
1/4 cup grated Parmesan cheese
1/2 tsp salt
1/4 tsp black pepper
For Garnish
Fresh parsley, chopped

Instructions

Step 1: Prepare the Meatball Mixture

In a large bowl, combine ground chicken, breadcrumbs, egg, Parmesan cheese, garlic, salt, pepper, and dried thyme.

Mix gently until just combined to keep the meatballs tender.

Step 2: Shape the Meatballs

Form the mixture into evenly sized meatballs, about 1.5 inches in diameter.

Step 3: Sear the Meatballs

Heat olive oil in a large skillet over medium heat.

Add the meatballs and cook for 6–8 minutes, turning occasionally until golden brown on all sides.

The meatballs do not need to be fully cooked yet.

Transfer them to a plate and set aside.

Step 4: Sauté the Mushrooms

In the same skillet, melt butter over medium heat.

Add sliced mushrooms and cook for 5–7 minutes until golden and tender.

Stir in minced garlic and cook for another minute until fragrant.

Step 5: Make the Creamy Sauce

Pour in the chicken broth and scrape up any browned bits from the bottom of the skillet.

Stir in heavy cream and Parmesan cheese.

Season with salt and black pepper.

Step 6: Simmer the Meatballs

Return the meatballs to the skillet.

Reduce the heat to low and simmer for about 10 minutes until the meatballs are fully cooked and the sauce thickens.

Step 7: Garnish and Serve

Sprinkle fresh parsley over the top before serving.

Serve warm with pasta, mashed potatoes, rice, or crusty bread.

Notes

Avoid overmixing the meatball mixture for softer meatballs.
Cremini or baby bella mushrooms add extra flavor.
For a lighter version, substitute half-and-half for heavy cream.
