Ingredients

1.5 lbs boneless, skinless chicken breasts or thighs, cut into 1 to 1.5-inch chunks
1 tablespoon olive oil
1 teaspoon salt
½ teaspoon black pepper
½ teaspoon garlic powder (optional)
½ teaspoon smoked paprika (optional)
810 skewers (wooden or metal; soak wooden skewers in water if using)
Bang Bang Sauce
½ cup mayonnaise
2 tablespoons sriracha (adjust to taste)
1 tablespoon honey (or sugar)
1 tablespoon rice vinegar (or lime juice)
Garnish
1 tablespoon chopped green onions
1 teaspoon sesame seeds

Instructions

1. Prep the Chicken

Cut the chicken into 1 to 1.5-inch chunks and pat dry with paper towels. Season with salt, black pepper, garlic powder, and smoked paprika. Toss with olive oil until evenly coated.

2. Make the Bang Bang Sauce

In a small bowl, whisk together mayonnaise, sriracha, honey, and rice vinegar until smooth and creamy. Adjust sweetness or spice level to your preference.

3. Assemble the Skewers

Thread the seasoned chicken pieces onto the skewers. If desired, alternate with vegetables like bell peppers or onions.

4. Grill the Chicken

Preheat the grill to medium-high heat. Grill skewers for 10–12 minutes, turning occasionally, until the chicken is fully cooked and lightly charred.

5. Add the Sauce

Brush the skewers with bang bang sauce during the last few minutes of grilling, or drizzle generously over the cooked skewers after grilling.

6. Serve

Garnish with chopped green onions and sesame seeds. Serve immediately with extra bang bang sauce on the side.

Notes

Chicken thighs stay extra juicy and flavorful on the grill.
For a lighter sauce, replace half the mayonnaise with Greek yogurt.
If using wooden skewers, soak them in water for at least 30 minutes to prevent burning.
These skewers can also be cooked in an air fryer or oven if a grill is unavailable.
Serve with rice, salad, or grilled vegetables for a complete meal.
