  2. Prepare Zucchini Sticks: Cut each zucchini in half lengthwise four times to create eight long sticks, then cut once crosswise to make 16 sticks per zucchini, about 4 inches long and 1/2 inch thick. Pat dry with paper towels if they feel wet to avoid sogginess.
  3. Set up Dipping Stations: In two shallow bowls, beat the egg in one and combine grated parmesan, garlic powder, and black pepper in the other. Dip each zucchini stick into the egg, allowing excess to drip off, then coat thoroughly in the parmesan mixture. Use one hand for egg and the other for coating to prevent clumping.
  4. Arrange and Bake: Place coated zucchini sticks on the prepared baking sheet in a single layer without overlapping or touching. Bake for 15 to 20 minutes, flipping the fries and rotating the pan halfway to ensure even browning until they turn a fairly dark golden color.
