Ingredients

Quesadilla Ingredients

  • 4 whole wheat tortillas
  • 2 cups Thanksgiving turkey, chopped into small pieces
  • ½ cup cranberry sauce
  • 2 cups shredded cheese (cheddar, Asiago, and pepper jack blend)
  • ¼ cup chopped fresh sage
  • Olive oil spray (for skillet)

Instructions

  1. Prep: Gather all ingredients and have them ready for assembling the quesadillas. Chop the turkey into small pieces and shred the cheeses if not pre-shredded.
  2. Heat the skillet: Spray a large skillet with olive oil and set it over medium heat to warm up, ensuring a non-stick surface for grilling the quesadillas.
  3. Layer the first quesadilla: Place one whole wheat tortilla in the skillet. On top of it, layer ¼ cup of shredded cheese, ½ cup of chopped turkey, ¼ cup of cranberry sauce, ⅛ cup of fresh chopped sage, and another ¼ cup of shredded cheese to help everything melt together.
  4. Add the second tortilla and cook: Place the second tortilla over the layered ingredients. Grill the quesadilla for about 5 minutes on one side until the tortilla is golden and the cheese begins to melt. Carefully flip and cook the other side for another 5 minutes until fully melted and crisp.
  5. Cut and serve: Remove the quesadilla from the skillet and cut it into quarters. Serve warm. Repeat the layering and cooking process to make the second quesadilla with remaining ingredients.

Notes

  • For extra crispiness, make sure the skillet is hot before adding the tortilla.
  • You can substitute whole wheat tortillas with flour or corn tortillas depending on preference.
  • Adjust the amount of cranberry sauce if you prefer a less sweet flavor.
  • Fresh sage can be substituted with dried sage but reduce quantity as dried herbs are more potent.
  • This recipe is perfect for using leftover Thanksgiving turkey and cranberry sauce.
