Ingredients

Jalapenos:

  • 12 large-sized fresh jalapenos

Filling:

  • 8 ounces cream cheese, softened
  • 1 cup pepper jack cheese, freshly shredded
  • 12 ounces chopped smoked beef brisket (home smoked or store bought)
  • 2 teaspoons kosher salt
  • 1 ½ teaspoons garlic powder
  • 1 teaspoon fresh cracked black pepper

Bacon Wrapping:

  • 24 ounces thick cut bacon
  • Rounded toothpicks, to secure the bacon

Finishing:

  • ¾ cup sweet and tangy barbeque sauce (your favorite brand, e.g. Sweet Baby Ray’s)

Instructions

  1. Preheat and Prepare: Preheat your oven to 375°F. Line a baking sheet with heavy-duty aluminum foil and place a cooling rack over it. Generously spray the rack with nonstick cooking spray to prevent sticking.
  2. Prepare the Jalapenos: Carefully slice a T-shaped incision just under the cap or stem of each jalapeno. Remove all seeds and membranes while keeping the cap attached, creating a hollow space for the filling. Wearing nitrile gloves is recommended to avoid skin irritation from the jalapenos.
  3. Make the Cream Cheese Mixture: In a medium bowl, stir together softened cream cheese with kosher salt, garlic powder, and freshly cracked black pepper until smooth and well combined.
  4. Add Pepper Jack Cheese: Stir the freshly shredded pepper jack cheese into the cream cheese mixture and set aside for filling.
  5. Fill the Jalapenos: Stuff each hollowed jalapeno first with chopped smoked brisket, filling the cavity.
  6. Top with Cream Cheese Mixture: Using a spoon or piping bag, top the brisket inside the jalapenos with as much of the cream cheese mixture as possible, completely filling each pepper to the brim.
  7. Wrap with Bacon: Wrap two slices of thick-cut bacon tightly around each stuffed jalapeno, securing the bacon with one to two rounded toothpicks to hold it all together.
  8. Bake Initially: Place the bacon-wrapped jalapenos on the prepared rack over the baking sheet. Bake in the preheated oven at 375°F for 45 minutes, or until the bacon starts to crisp.
  9. Increase Oven Temperature: After 45 minutes, increase the oven temperature to 400°F for the finishing step.
  10. Glaze with BBQ Sauce: Remove the pan from the oven and brush each jalapeno generously with your preferred sweet and tangy BBQ sauce to add flavor and caramelization.
  11. Final Bake: Return the tray to the oven and bake for an additional 10 minutes at 400°F, allowing the bacon to become crisp and caramelized with the BBQ glaze.
  12. Rest and Serve: Remove the Texas Twinkies from the oven and let them rest for a few minutes before serving to allow flavors to settle and to cool slightly for safe consumption.
