Ingredients

Meat and Vegetables

  • 1 pound lean ground beef
  • 1 small onion, diced
  • 1 teaspoon minced garlic
  • 1 cup frozen mixed veggies (green beans, carrots, peas, and corn blend)

Dairy and Condiments

  • 1 can cream of mushroom soup
  • ½ cup sour cream
  • 1 tablespoon Worcestershire sauce
  • 8 ounces cheddar cheese, freshly shredded, divided

Other

  • 32 ounces frozen tater tots
  • Cooking spray (for greasing the baking dish)

Instructions

  1. Preheat Oven and Prepare Dish: Preheat your oven to 350°F (175°C) and generously spray a 9×13 inch baking dish with cooking spray to prevent sticking.
  2. Cook Ground Beef Mixture: In a large skillet over medium heat, cook the ground beef, diced onion, and minced garlic until the beef is no longer pink and the onions are softened. Drain any excess fat as needed to keep the dish lean.
  3. Combine Creamy Ingredients: Stir into the cooked beef mixture the cream of mushroom soup, sour cream, and Worcestershire sauce until everything is evenly combined and creamy.
  4. Add Vegetables: Mix in the frozen mixed vegetables to the beef and creamy mixture ensuring the veggies are well distributed.
  5. Assemble Casserole Base: Spread the beef and vegetable mixture evenly in the bottom of the prepared 9×13 baking dish.
  6. First Cheese Layer: Sprinkle 4 ounces of the shredded cheddar cheese evenly over the meat and vegetable mixture.
  7. Add Tater Tots: Arrange the frozen tater tots in a single layer over the cheese, covering as much of the surface as possible.
  8. Bake: Place the casserole in the preheated oven and bake uncovered for 45 minutes, until the tater tots are golden and crispy on top.
  9. Finish with Cheese: Remove the casserole from the oven and evenly sprinkle the remaining 4 ounces of shredded cheddar cheese over the tater tot layer. Return to the oven and bake for an additional 5 minutes or until the cheese has melted beautifully.

Notes

  • You can substitute cream of mushroom soup with cream of celery or cream of chicken for a different flavor.
  • For a lower-fat version, use reduced-fat sour cream and lean ground turkey instead of beef.
  • Feel free to add extra spices like paprika or black pepper to enhance the flavor.
  • Leftover casserole can be refrigerated for up to 3 days and reheated in the oven or microwave.
  • Ensure the tater tots are spread evenly for consistent crispiness across the casserole top.
