Instructions

  1. Preheat and Prepare Pan: Preheat your oven to 350°F (175°C) and grease a 9×13 inch casserole pan to prevent sticking and ensure easy serving.
  2. Cook Sausage and Vegetables: In a medium skillet over medium heat, cook the ground breakfast sausage along with diced onions and red bell pepper until the sausage is browned and crumbled. Drain any excess grease from the mixture to keep the casserole from being greasy, then evenly spread it in the prepared casserole pan.
  3. Mix Egg Mixture: In a mixing bowl, whisk together the 8 eggs, 2 cups of milk, garlic powder, and pepper until fully combined and smooth. Pour this egg mixture evenly over the sausage and vegetable layer in the casserole pan.
  4. Add Cheese and Tater Tots: Sprinkle half of the 1½ cups of Colby jack cheese evenly over the egg and sausage mixture, then distribute all of the frozen tater tots over the top to form an even layer.
