Ingredients

Sweet Potato Sauce

  • 350 grams sweet potato (peeled and diced, approx. 2 cups or 1 medium sweet potato)
  • 1 cup water
  • 1/2 cup coconut milk
  • 1/3 cup nutritional yeast
  • 1 teaspoon dijon mustard
  • 2 teaspoons soy sauce
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon paprika
  • 1/2 teaspoon salt (or to taste)

Pasta

  • 400 grams elbow pasta
  • Water for boiling
  • Salt for pasta water

Instructions

  1. Cook Sweet Potato: Peel and chop your sweet potato into 2 cm cubes and add them to a small saucepan with enough water to cover. Bring to a boil over high heat and cook until the sweet potato is completely soft and tender, approximately 10-12 minutes.
  2. Cook Pasta: While the sweet potatoes are cooking, bring a large saucepan of salted water to a boil. Add elbow pasta and cook according to the package directions, usually about 8-10 minutes, until al dente. Drain and return pasta to the saucepan, reserving some pasta water for later use.
  3. Prepare Sauce: Drain the cooked sweet potato and transfer it to a blender. Add coconut milk, 1 cup water, nutritional yeast, dijon mustard, soy sauce, garlic powder, onion powder, paprika, and salt. Blend for 2–3 minutes until the sauce is completely smooth and silky.
  4. Combine Pasta and Sauce: Pour the blended sauce over the cooked pasta in the saucepan. Stir well to combine, adding reserved pasta water a little at a time to reach your desired sauce consistency. Taste and adjust salt if necessary.
  5. Serve: Serve the sweet potato mac and cheese immediately while warm for the best creamy texture.
