Ingredients

For the Sugar Cookie Base

  • 16 oz Refrigerated Sugar Cookie Dough
  • Sprinkles (optional)

For the Cheesecake Filling

  • 8 oz Cream Cheese, softened
  • 6 tablespoons Granulated Sugar
  • 1 large Egg
  • 2 tablespoons Sour Cream
  • 1 teaspoon Vanilla Extract
  • 1 pinch Salt

Instructions

  1. Preheat and Prepare Pan: Preheat your oven to 350°F (175°C). Line a 9×9-inch baking pan with parchment paper to prevent sticking and allow easy removal of the bars later.
  2. Form the Cookie Base: Take two-thirds of the refrigerated sugar cookie dough and press it evenly into the bottom of the prepared baking pan to form a solid base.
  3. Make the Cheesecake Filling: In a large bowl, beat the softened cream cheese with granulated sugar using a hand mixer or stand mixer on medium speed until smooth and creamy, about 2 minutes.
  4. Add Remaining Filling Ingredients: Add the sour cream, egg, vanilla extract, and a pinch of salt to the cream cheese mixture. Stir gently or mix on low speed just until combined to avoid overmixing.
  5. Assemble the Layers: Pour the cheesecake filling over the pressed cookie dough in the pan and spread it out evenly using a rubber spatula.
  6. Add Cookie Dough Topping: Flatten the remaining sugar cookie dough pieces slightly and place them on top of the cheesecake layer. The dough pieces don’t need to cover the cheesecake completely; small gaps are fine.
  7. Add Sprinkles: Evenly scatter sprinkles over the top of the cookie dough layer for a colorful, festive finish.
  8. Bake: Bake in the preheated oven for 25 to 30 minutes, or until the cookie dough is lightly golden around the edges, the cheesecake edges are set, and the center still jiggles slightly when moved.
  9. Cool and Chill: Remove the pan from the oven and allow the bars to cool to room temperature. Then refrigerate the bars for at least 2 hours, up to 3 days, to let the cheesecake set fully.
  10. Serve: Use the parchment paper to lift the cheesecake bars out of the pan. Slice into 12 servings and enjoy your sweet and creamy dessert bars!

Notes

  • For best results, use room temperature cream cheese to ensure a smooth, lump-free cheesecake filling.
  • Do not overbake; a slightly jiggly center ensures a creamy texture in the cheesecake layer.
  • Feel free to customize with your favorite sprinkles or omit them for a simpler look.
  • Chill time is important for the bars to firm up and slice cleanly.
  • Store leftover bars refrigerated in an airtight container for up to 3 days.
