Ingredients

Shortcake Cookies

Instructions

  1. Mix Dry Ingredients: In a medium-sized bowl, whisk together the all-purpose flour, salt, and baking powder. Set aside to use later.
  2. Cream Butter and Sugar: Using a stand mixer fitted with the paddle attachment, cream the butter and sugar together on medium speed until the mixture is light and fluffy, about 2 minutes. Be sure to scrape down the sides of the bowl during mixing.
  3. Add Egg and Vanilla: Add the room temperature egg and vanilla extract to the creamed mixture. Continue to mix on medium speed, scraping down the sides of the bowl for even incorporation.
  4. Combine Wet and Dry Ingredients: Gradually add the dry ingredients to the wet ingredients and mix until a soft dough forms that starts to pull away from the sides of the bowl. Scrape down the sides again and mix briefly to ensure an even dough.
  5. Roll Dough: Transfer the dough onto a piece of parchment paper and flatten into a disc. Place another parchment paper on top and roll out the dough to approximately 1/8 inch thickness.
  6. Chill Dough: Place the rolled dough with parchment onto a cookie sheet and refrigerate for at least 2 hours or overnight to firm up.
  7. Cut Cookies: After chilling, optionally press a cookie stamp onto the dough for imprinting. Use a 5-inch circle cookie cutter to cut out as many cookies as possible from the dough.
