Instructions

Add the thawed and thoroughly squeezed dry spinach, cooking the mixture for 3 more minutes until all excess liquid evaporates. Transfer the spinach mixture to a large bowl and allow it to cool completely.
  2. Finish the spinach filling: Once the spinach mixture has cooled, stir in the crumbled feta cheese and lightly beaten eggs. Mix thoroughly to combine but avoid adding these ingredients while the spinach is still hot, as heat can melt the cheese and scramble the eggs, causing an undesirable texture.
  3. Prepare the puff pastry: Lightly flour your work surface to prevent sticking. Unfold the thawed puff pastry sheets gently. Evenly spread half of the spinach filling over each sheet, keeping the filling within 1/2 inch of the edges.
