Ingredients

Filling

  • 10 oz frozen spinach, thawed, drained, and chopped
  • 1/2 cup shredded mozzarella cheese
  • 1/2 cup grated parmesan cheese
  • 1/4 cup cream cheese, softened
  • 1 egg, separated

Dough

  • 8 oz crescent rolls (1 can)

Instructions

  1. Preheat Oven: Preheat your oven to 375°F (190°C) and line a cookie sheet with foil for easy cleanup.
  2. Prepare Filling: In a medium bowl, combine the chopped spinach, shredded mozzarella, grated parmesan, softened cream cheese, and the egg yolk. Mix thoroughly until well incorporated to form a creamy spinach-cheese filling.
  3. Arrange Dough: Open the can of crescent rolls and carefully lay each triangular dough piece flat on the prepared cookie sheet, making sure they don’t overlap.
  4. Fill and Roll: Spoon an even amount of the spinach mixture onto the wider end of each crescent triangle. Roll each triangle up tightly starting from the wide end toward the pointed tip, encasing the filling inside.
  5. Brush with Egg White and Bake: Using a brush, coat the tops of the rolls with the reserved egg white to help them brown nicely. Bake in the preheated oven for 14 to 16 minutes, or until the rolls are golden brown and cooked through.
  6. Serve: Remove from oven and let the spinach rolls cool slightly. Serve them warm for the best flavor and texture.

Notes

  • Be sure to thoroughly drain and chop the spinach to avoid soggy rolls.
  • You can substitute fresh cooked spinach if preferred; just squeeze out excess moisture before using.
  • For extra flavor, add garlic powder or Italian seasoning to the filling mixture.
  • These rolls can be prepared ahead of time and refrigerated before baking; just increase baking time by a few minutes if baking chilled rolls.
  • Serve with marinara or a creamy dip for added taste.
