Ingredients

Graham Cracker Crust

Chocolate Cheesecake

  • 24 oz (680 g) cream cheese, softened at room temperature
  • 3/4 cup (150 g) granulated white sugar
  • 1/2 tbsp (4 g) cornstarch
  • 6 oz (170 g) milk chocolate bars, melted and slightly cooled (Endangered Species Chocolate)
  • 1/4 cup (62 g) sour cream, at room temperature
  • 2 tsp vanilla extract
  • 3 eggs, at room temperature

Chocolate Ganache and Topping

  • 3 oz (85 g) milk chocolate bar, chopped (Endangered Species Chocolate)
  • 1/4 cup (60 ml) heavy cream
  • 1 cup (60 g) mini marshmallows (for topping)

Instructions

  1. Prepare the Graham Cracker Crust: Preheat the oven to 350°F (177°C). Spray a 9×9 inch metal baking pan with non-stick spray and line it with parchment paper. Pulse the graham crackers in a food processor until fine crumbs form. Add melted butter and light brown sugar, then pulse again until combined. Press the crumb mixture firmly into the bottom of the pan using a ¼ cup measuring cup to create an even layer. Bake for 10 minutes, then let cool. Reduce oven temperature to 325°F (163°C).
  2. Make the Chocolate Cheesecake Filling: In a large bowl, beat the softened cream cheese, granulated sugar, and cornstarch on medium speed with a hand mixer until smooth and lump-free, about 2 minutes. Add melted milk chocolate, sour cream, and vanilla extract, mixing on medium-low speed just until combined. Incorporate the eggs one at a time, mixing on medium-low speed gently until fully blended.
  3. Bake the Cheesecake Bars: Pour the cheesecake batter over the cooled graham cracker crust in the prepared pan. Bake at 325°F (163°C) for 39-42 minutes until the center jiggles slightly. Turn off the oven and prop the oven door open with a wooden utensil; let the cheesecake rest inside for 10 minutes.
  4. Cool and Chill the Cheesecake: Remove the pan from the oven and cool completely on a wire rack. Afterward, transfer to the refrigerator and chill for at least 6 hours or overnight until fully set.
  5. Prepare the Chocolate Ganache: Remove the chilled cheesecake from the pan by lifting the parchment paper and place it on a serving plate or board. Place chopped milk chocolate in a small bowl. Heat the heavy cream until steaming, then pour over the chocolate. Allow to sit for a minute before stirring until smooth and fully melted. If necessary, warm gently over a double boiler or microwave in short intervals to achieve a smooth ganache.
