Ingredients

Potatoes

  • 1.5 lbs. small red potatoes
  • 3 tablespoons olive oil
  • salt and pepper to taste

Butter Mixture

  • 4 tablespoons unsalted butter
  • 3 cloves garlic, minced
  • 1 teaspoon Old Bay seasoning
  • 1/4 teaspoon freshly ground black pepper

Toppings

  • 2 tablespoons chopped chives
  • 3/4 cup freshly grated Monterey Jack / Colby cheese

Instructions

  1. Prepare Potatoes: Rinse and gently scrub the potatoes under cold water to clean off any dirt.
  2. Preheat Oven and Prepare Pan: Preheat your oven to 500° F and spray a rimmed baking sheet with cooking spray to prevent sticking.
  3. Boil Potatoes: Bring a medium pot of water to a boil, add 2 tablespoons kosher salt, then add the potatoes. Boil for about 15 minutes or until a fork can easily pierce them.
  4. Make Butter Mixture: In a small microwave-safe bowl, melt the butter. Stir in minced garlic, Old Bay seasoning, and black pepper until well combined.
  5. Drain and Coat Potatoes: Drain the potatoes and pat dry to help the olive oil stick to their skin. In a large bowl, toss potatoes with olive oil, salt, and pepper until evenly coated.
  6. Smash Potatoes: Arrange the potatoes on the prepared baking sheet. Using a heavy-bottomed glass or potato masher, gently press down on each potato until they are about 1/2-inch thick.
  7. Brush with Butter Mixture: Use a pastry brush to evenly coat each smashed potato with the garlic butter mixture.
  8. First Bake: Bake potatoes in the preheated oven for 5 to 7 minutes to crisp the edges and infuse flavor.
  9. Add Toppings: Sprinkle 1 tablespoon of chopped chives evenly over the potatoes, followed by an equal amount of the grated Monterey Jack / Colby cheese on each potato.
  10. Final Bake: Sprinkle the remaining chopped chives on top of the cheese and return the potatoes to the oven. Bake another 5 to 7 minutes until the cheese is melted and bubbly.

Notes

  • Boiling potatoes until fork-tender ensures a soft interior.
  • Be careful when smashing potatoes to avoid breaking them apart completely.
  • Use a high oven temperature to get crispy edges and nicely roasted flavors.
  • Old Bay seasoning adds a savory, slightly spicy flavor complementing the cheese.
  • You can substitute Monterey Jack / Colby cheese with cheddar or mozzarella if desired.
  • Serve these as a side dish with grilled meats, roasted chicken, or as part of a vegetarian meal.
