Ingredients

Chicken

  • 2 pounds boneless, skinless chicken thighs or breasts

Tomato and Broth

  • 15 ounces diced tomatoes in juices
  • 1/2 cup low-sodium chicken broth (for slow cooker)
  • 1 cup low-sodium chicken broth (for Instant Pot)

Seasonings and Herbs

  • 4 garlic cloves, minced
  • 2 tablespoons Italian seasoning or your favorite dried herb
  • 1 teaspoon garlic salt (or regular salt)
  • 1/4 teaspoon pepper
  • Salt & pepper to season the chicken

Instructions

  1. Season the Chicken: Season the chicken thighs or breasts with salt and pepper on all sides to enhance their natural flavor before cooking.
  2. Prepare for Slow Cooker: Place the seasoned chicken into the slow cooker. Add diced tomatoes, minced garlic, Italian seasoning, garlic salt, pepper, and 1/2 cup low-sodium chicken broth. Stir gently to combine all ingredients evenly.
  3. Cook in Slow Cooker: Cover and cook on HIGH for 2 to 3 hours or on LOW for 4 to 6 hours until the chicken is thoroughly cooked and tender.
  4. Prepare for Instant Pot: Add all ingredients—the seasoned chicken, tomatoes, garlic, herbs, garlic salt, pepper, and 1 cup chicken broth—into the pressure cooker. Stir to mix the ingredients evenly.
  5. Pressure Cook: Seal the Instant Pot lid and ensure the valve is set to sealing. Select high pressure and cook for 9 minutes if using chicken thighs, or 8 minutes for chicken breasts.
  6. Release Pressure: Once cooking time is complete, perform a quick release to safely release the pressure. Carefully open the lid and check the chicken for doneness.

Notes

  • Using chicken thighs will result in juicier, more tender meat compared to breasts.
  • Italian seasoning can be substituted with a mix of dried basil, oregano, and thyme for a similar flavor.
  • Adjust garlic salt and pepper to taste depending on your preference and dietary needs.
  • Serve with rice, pasta, or crusty bread to soak up the flavorful tomato and herb sauce.
  • For thicker sauce, remove the lid near the end of slow cooking to allow some liquid to evaporate.
