Ingredients

Chicken

Sauce

  • 1 cup low-sodium chicken broth
  • 1/2 cup Dijon mustard
  • 1 tablespoon apple cider vinegar
  • 1 tablespoon dried rosemary
  • 2 garlic cloves, minced
  • 1 1/2 teaspoons salt
  • 1/2 teaspoon pepper

Instructions

  1. Season the Chicken: Season the chicken pieces generously with salt and pepper to enhance flavor. Place the seasoned chicken into the slow cooker or prepare for instant pot cooking.
  2. Prepare the Sauce: In a small bowl, combine chicken broth, Dijon mustard, apple cider vinegar, dried rosemary, minced garlic, salt, and pepper. Mix thoroughly to create a smooth sauce.
  3. Slow Cooker Method: Pour the prepared sauce over the chicken in the slow cooker. Cover and cook on HIGH for 2 to 3 hours, or on LOW for 4 to 6 hours, until the chicken is tender and cooked through.
  4. Instant Pot Sauté (Skin-on Chicken Only): Turn the Instant Pot to sauté mode and add the oil. Once hot, add the chicken skin side down and cook for 3 to 4 minutes per side to crisp the skin. Skip this step if using skinless chicken.
  5. Add Sauce in Instant Pot: After sautéing, pour the prepared sauce over the chicken inside the Instant Pot.
  6. Pressure Cook: Close the Instant Pot lid and seal the vent. Select high pressure and set the timer for 13 minutes. When the cooking time is complete, perform a quick release of the pressure.
  7. Serve: Once cooking is done, check the chicken for doneness and serve hot with your preferred side dishes.
