Ingredients

Ingredients

  • 8 ounces wide egg noodles
  • 6 eggs
  • 1 pound low-fat cottage cheese
  • 1 pound low-fat sour cream
  • 1 tablespoon butter, melted
  • 1/3 cup honey or maple syrup
  • 1/2 cup raisins
  • 1 teaspoon cinnamon

Instructions

  1. Prepare the noodles: Boil the wide egg noodles in lightly salted water for about 4 minutes until slightly tender but still firm. Drain and set aside to cool.
  2. Mix the kugel ingredients: In a large bowl, combine the cooked noodles, eggs, cottage cheese, sour cream, melted butter, honey or maple syrup, raisins, and cinnamon. Stir gently but thoroughly until the mixture is well blended.
  3. Slow cooker method: Generously spray the inside of the slow cooker with cooking spray to prevent sticking. Pour the prepared kugel mixture into the slow cooker and spread evenly. Cover and cook on HIGH for 2 to 3 hours or on LOW for 4 to 6 hours, until the custard is fully set and a knife inserted comes out clean. Allow the kugel to cool slightly before removing it from the slow cooker.
  4. Baking method: Preheat your oven to 375°F (190°C). Grease a 9×13 inch casserole dish generously with butter or cooking spray. Transfer the prepared kugel mixture into the dish, spreading it evenly. Bake for 30 to 40 minutes until the kugel is set and a knife inserted in the center comes out clean.

Notes

  • Check the kugel’s doneness by inserting a knife into the center; it should come out clean when fully cooked.
  • You can substitute honey with maple syrup to adjust sweetness to your preference.
  • Allow the kugel to cool slightly before serving to help it firm up and slice easily.
  • This recipe can be made ahead of time and reheated gently before serving.
