  • 2 teaspoons dried dill
  • 1 1/2 teaspoons salt
  • 1 1/2 teaspoons garlic powder
  • 1 1/2 teaspoons onion powder
  • 1/2 teaspoon pepper
  • 1 bay leaf
  • 1 cup fresh spinach, chopped

Instructions

  1. Prepare the Meatballs: In a medium bowl, combine the ground chicken, matzo meal, egg, 1 teaspoon dried dill, 1 teaspoon salt, 1/2 teaspoon garlic powder, 1/2 teaspoon onion powder, and 1/4 teaspoon pepper. Mix gently until just combined to keep the meatballs tender. Shape the mixture into approximately 12 to 15 small meatballs.
  2. Add Soup Ingredients to Slow Cooker: Place all soup base ingredients except the Israeli couscous and spinach—chicken broth, water, sliced celery, diced carrots, diced onion, minced garlic, 2 teaspoons dried dill, 1 1/2 teaspoons salt, 1 1/2 teaspoons garlic powder, 1 1/2 teaspoons onion powder, 1/2 teaspoon pepper, and bay leaf—into the slow cooker. Stir well to combine flavors.
  3. Add Meatballs to Soup: Gently add the prepared meatballs into the slow cooker. Stir carefully to ensure the meatballs are evenly distributed in the broth without breaking.
  4. Cook the Soup: Cover and cook on HIGH for 2 to 3 hours or LOW for 4 to 6 hours until meatballs are fully cooked and vegetables are tender.

  9. Seal and Cook in Instant Pot: Close and seal the Instant Pot lid. Cook on HIGH pressure for 10 minutes.

  11. Remove Bay Leaf: Open the lid and remove the bay leaf from the pot.
  12. Cook Couscous in Sauté Mode: Turn the Instant Pot to sauté and stir in the Israeli couscous. Cook uncovered for 8 to 10 minutes, stirring occasionally until the couscous is tender and cooked through.
  13. Finish with Spinach: Stir in the fresh spinach before serving to add color and freshness.
