Ingredients

Beef and Vegetables

  • 2 pounds beef sirloin, sliced into strips
  • 2 cups fresh broccoli, chopped
  • 1/3 cup onion, diced

Sauce and Seasonings

  • 1/2 cup coconut aminos (or low-sodium soy sauce)
  • 1 tablespoon sesame oil

Instructions

  1. Prepare the Sauce: Add beef broth, coconut aminos (or soy sauce), sesame oil, garlic, ground ginger, salt, and pepper to the slow cooker and mix well to combine.
  2. Add Beef and Onion: Stir in the sliced beef sirloin and diced onion into the slow cooker so they are evenly coated with the sauce mixture.
  3. Slow Cook: Cook on HIGH for 2 to 3 hours or on LOW for 4 to 6 hours until the beef is tender. In the last 30 minutes of cooking, add the fresh chopped broccoli and stir to mix.
  4. Instant Pot Sauté: Turn on the Instant Pot and select the sauté function. Heat the sesame oil, then add the beef and onion, cooking until the beef browns, about 2 to 3 minutes. Add garlic and cook another minute.
  5. Deglaze and Add Sauce: Pour in beef broth and scrape the bottom to deglaze, loosening any browned bits. Add coconut aminos (or soy sauce), salt, pepper, sesame oil, garlic, and ginger. Stir well.
  6. Pressure Cook: Close the lid, seal the valve, and set the Instant Pot to high pressure for 10 minutes. When done, quick release the pressure carefully.
  7. Add Broccoli and Thicken: Stir in broccoli and optional arrowroot mixture if using. Turn the Instant Pot back to sauté and cook for a few minutes until the sauce thickens and broccoli is tender.
