Ingredients

Fajita Mixture

  • 2 tablespoons extra virgin olive oil (or avocado oil)
  • 1 ½ lb lean sirloin steak, sliced into thin strips
  • 1 red bell pepper, thinly sliced
  • 1 green bell pepper, thinly sliced
  • 1 orange bell pepper, thinly sliced
  • 1 large red onion, thinly sliced
  • 2 tablespoons taco seasoning
  • 1 teaspoon smoked paprika
  • ½ tablespoon low sodium soy sauce
  • Juice of one medium lime

For Serving

  • Fresh cilantro, for garnish
  • Tortillas
  • Sour cream
  • Shredded lettuce
  • Shredded cheese
  • Salsa

Instructions

  1. Preheat the oven: Preheat your oven to 400°F (200°C) and pour the olive oil evenly across a large baking sheet to coat it lightly. Set aside while you prepare the ingredients.
  2. Prepare the steak and vegetables: Slice the sirloin steak and all the bell peppers into thin strips for even cooking. Thinly slice the red onion as well. Place all the sliced ingredients together on the baking sheet.
  3. Season the mixture: Sprinkle taco seasoning, smoked paprika, low sodium soy sauce, and lime juice over the steak and vegetables. Toss everything together on the sheet pan to ensure all pieces are evenly coated with the spices and sauce. Spread the mixture out in a single, even layer.
  4. Bake the fajitas: Place the baking sheet in the preheated oven and roast for 10 to 13 minutes, or until the steak is cooked to your preferred doneness and the vegetables are tender and slightly caramelized around the edges.
  5. Serve and garnish: Remove from the oven and serve immediately. Warm the tortillas and offer sour cream, shredded lettuce, shredded cheese, and salsa on the side. Garnish the fajitas with fresh cilantro before enjoying your flavorful meal.

Notes

  • Use a rimmed baking sheet to prevent any juices from spilling during roasting.
  • For spicier fajitas, add a pinch of cayenne pepper or a few dashes of hot sauce to the seasoning mix.
  • Lean sirloin steak is best for quick roasting to keep the meat tender and juicy.
  • Make sure to slice vegetables and steak thinly for even cooking within the short roasting time.
  • Leftovers can be stored in an airtight container in the refrigerator for up to 3 days.
