Instructions

  1. Heat the skillet: Heat a large skillet over medium-high heat and add the butter and olive oil, allowing the butter to melt completely before proceeding.
  2. Cook squash mixture: Add the yellow squash, sliced onions, minced garlic, Italian seasoning, kosher salt, and pepper to the skillet. Mix everything together and cook for 7 minutes without stirring to allow the vegetables to soften and brown slightly.
  3. Stir and continue cooking: Stir the contents well, then cook for an additional 5 minutes, stirring occasionally if desired. Add three-quarters of the chopped basil and cook for 2 more minutes to let the flavors meld.
  4. Finish and serve: Sprinkle the sautéed squash with the remaining fresh basil leaves before serving warm as a delightful side dish.
