Ingredients

10 slices English cucumber
3 slices smoked salmon
1 tbsp cream cheese or Boursin cheese

Instructions

Peel the cucumber lengthwise into thin strips using a Y-peeler or potato peeler.
Lay cucumber strips slightly overlapping on paper towels.
Pat dry to remove excess moisture.
Spread cream cheese or Boursin evenly over the cucumber strips.
Add smoked salmon slices on top.
Carefully roll everything tightly into a log shape.
Slice into bite-sized rolls.
Secure with toothpicks if desired and serve immediately.

Notes

Boursin shallot and chive cheese adds extra flavor.
Drying cucumbers helps rolls stay firm and prevents slipping.
Can be made with spicy mayo, tzatziki, hummus, or ranch instead of cream cheese.
Best served fresh and chilled.
Perfect as a low-carb snack or appetizer platter addition.
