Ingredients

1 pound ground beef
1 (10-ounce) can Rotel tomatoes, undrained
1 (16-ounce) box Velveeta cheese, cut into cubes

Instructions

Place the ground beef in a large skillet or pot over medium heat.
Cook the beef, breaking it apart with a spoon, until browned and no longer pink. Drain excess grease if needed.
Cut the Velveeta cheese into small cubes to help it melt more quickly.
Add the entire can of Rotel tomatoes, including the juices, to the cooked beef.
Stir in the cubed Velveeta cheese.
Cook over low to medium heat, stirring frequently, until the cheese is completely melted and the mixture is smooth and creamy.
Transfer the dip to a serving bowl or slow cooker to keep warm.
Serve immediately with your favorite dippers.

Notes

Serve with tortilla chips, corn chips, crackers, pretzels, or fresh vegetables.
For a spicier dip, use Hot Rotel tomatoes.
Ground sausage can be substituted for ground beef for extra flavor.
Keep warm in a slow cooker during parties to maintain a smooth, creamy texture.
Store leftovers in an airtight container in the refrigerator for up to 3 days. Reheat gently before serving.
