  • 1 juice of one Lemon
  • 1/2 cup Sundried Tomatoes (reserve 2 tablespoons of the oil)

Instructions

  1. Preheat Oven and Prepare Pan: Preheat your oven to 400°F (200°C) and line a sheet pan with parchment paper to prevent sticking and facilitate easy cleanup.
  2. Arrange Vegetables and Feta: Place the block of feta cheese in the center of the sheet pan. Arrange asparagus, yellow bell peppers, grape tomatoes, sliced red onion, and zucchini in a single layer around the feta.
