  • 1 tablespoon all-purpose flour

Instructions

  1. Roast the Garlic: To prepare the roasted garlic, preheat your oven to 400°F (200°C). Cut the top off a head of garlic to expose the cloves, drizzle with olive oil, wrap in foil, and roast for about 35-40 minutes until the cloves are soft and golden. Let cool.
  2. Mash the Garlic: Gently squeeze the roasted garlic cloves from their skins into a small bowl. Use a fork to mash the cloves into a smooth paste.
  3. Heat Butter and Cream: In a small saucepan over low to medium heat, melt the unsalted butter. Add 1 3/4 cups of heavy cream along with the roasted garlic paste, warming the mixture gently. Ensure it becomes very warm but do not allow it to boil to prevent curdling.
  4. Add Cheese and Seasoning: Slowly whisk in the freshly grated Parmesan cheese, salt to taste, and black pepper. Stir continuously until the cheese has fully melted into the sauce, creating a smooth blend.
  5. Thicken the Sauce: In a small bowl, combine 1 tablespoon of all-purpose flour with the remaining 1/4 cup of heavy cream, whisking until smooth. Gradually add this mixture into the saucepan, stirring constantly and heating until the sauce thickens to a creamy consistency.
