Ingredients

  • 2 medium beets, peeled and cut into wedges
  • 2 medium sweet potatoes, peeled and cubed
  • 2 tablespoons olive oil
  • 2 garlic cloves, minced (or 1 teaspoon garlic powder)
  • 1 teaspoon ground cumin or smoked paprika
  • Salt and freshly ground black pepper, to taste
  • 1/3 cup crumbled feta cheese
  • 2 tablespoons fresh cilantro, chopped
  • Optional: squeeze of fresh lime or lemon juice

Instructions

  1. Preheat oven to 400 °F (200 °C) and line a baking sheet with parchment paper or foil.
  2. In a large bowl, toss beets and sweet potatoes with olive oil, garlic, cumin or paprika, salt, and pepper until evenly coated.
  3. Spread vegetables in a single layer on the baking sheet without crowding.
  4. Roast for 25–30 minutes, tossing halfway, until tender and caramelized.
  5. Transfer to a serving platter and sprinkle with feta while warm.
  6. Garnish with chopped cilantro and an optional squeeze of lime or lemon juice. Serve warm.
