Ingredients

Wet Ingredients

  • 1/2 cup butter
  • 1/2 cup pumpkin
  • 2 large eggs
  • 2 Tablespoons milk
  • 1 teaspoon vanilla

Dry Ingredients

  • 3 cups flour
  • 1 Tablespoon pumpkin pie spice
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 2 cups sugar

Optional Topping

  • 1 cup sugar mixed with 1 teaspoon cinnamon

Instructions

  1. Mix Wet Ingredients: In the mixing bowl of a stand mixer, combine the butter, pumpkin, sugar, eggs, vanilla, and milk. Blend these ingredients until the mixture becomes smooth and creamy.
  2. Combine Dry Ingredients: In a separate bowl, thoroughly mix the flour, pumpkin pie spice, baking powder, and salt until evenly blended.
  3. Incorporate Dry into Wet: Gradually add the dry mixture to the mixing bowl with the wet ingredients, mixing on low speed until all ingredients are blended together.
  4. Scrape and Mix: Scrape down the sides of the mixing bowl to incorporate any unmixed ingredients, then mix again to ensure an even dough.
  5. Prepare Baking Sheets: Line two cookie sheets with parchment paper. Drop cookie dough by tablespoonfuls onto the sheets, spacing each cookie about 2 inches apart.
  6. Add Optional Topping: If desired, sprinkle the tops of the cookies with the cinnamon-sugar mixture for extra flavor and crunch.
  7. Bake: Bake the cookies in a preheated oven at 375°F (190°C) for 10 to 12 minutes, or until the cookies turn golden brown around the edges.
  8. Cool and Serve: Remove cookies from the oven and transfer them to a wire rack to cool completely before serving. Enjoy your delicious pumpkin sugar cookies!
