Ingredients

  • 3 large egg whites (room temperature)
  • 3/4 cup granulated sugar
  • 1/4 tsp cream of tartar
  • 1/4 tsp salt
  • 1/2 tsp rose water

For the rose cream filling:

  • 1/2 cup unsalted butter (softened)
  • 1 cup powdered sugar
  • 12 tbsp heavy cream or milk
  • 1/2 tsp rose water
  • 1/2 tsp vanilla extract

To assemble:

  • 1/2 cup finely chopped pistachios (unsalted, shelled)
  • Dried edible rose petals (optional, for garnish)

Instructions

  1. Preheat oven to 225°F (110°C) and line two baking sheets with parchment paper.
  2. In a grease-free bowl, beat egg whites with cream of tartar and salt until soft peaks form. Gradually add sugar and continue to beat until stiff, glossy peaks form. Gently fold in rose water.
  3. Transfer meringue to a piping bag and pipe 1-inch rounds onto the baking sheets.
  4. Bake for 1.5 hours, then turn off oven and leave meringues inside with the door slightly ajar for another hour to cool and dry completely.
  5. To make the filling, beat softened butter and powdered sugar until fluffy. Add rose water, vanilla, and enough cream to make it smooth and spreadable.
  6. Pair meringue cookies by size, spread rose cream on one half, and sandwich together.
  7. Roll edges in crushed pistachios and garnish with dried rose petals if desired.
