Ingredients

1 cup milk
1 cup granulated sugar
1 cup peanut butter
2 large eggs, room temperature
1½ cups all-purpose flour
½ cup old-fashioned oats
1 tablespoon baking powder
½ teaspoon salt

Instructions

Move the oven rack to the center position and preheat the oven to 350°F (175°C).
Lightly spray an 8×4-inch loaf pan with nonstick cooking spray. Line the pan with parchment paper for easy removal.
In a heavy-duty blender or food processor, combine the milk, sugar, peanut butter, and eggs. Blend for 1–2 minutes until smooth and creamy.
Add the flour, oats, baking powder, and salt. Process for about 1 minute or until the batter is smooth. If using a lower-powered appliance, add the dry ingredients gradually.
Pour the batter into the prepared loaf pan and spread evenly.
Bake for 1 hour and 10 minutes, or until a toothpick inserted into the center comes out clean or with a few moist crumbs.
Remove the loaf from the oven and let it cool in the pan for 10 minutes.
Transfer the bread to a wire rack and allow it to cool completely before slicing.
Serve plain or with your favorite toppings such as peanut butter, jelly, honey, or sliced bananas.
