Ingredients

Fruit Filling

  • 32 ounce (2 16-ounce) packages of frozen peaches (thawed with juice)
  • 1 cup granulated sugar
  • 4 tablespoons all-purpose flour

Topping

  • ¾ cup all-purpose flour
  • ½ cup dark brown sugar (tightly packed)
  • ½ teaspoon ground cinnamon
  • ½ cup cold cubed salted sweet cream butter
  • ¾ cup old-fashioned rolled oats

Instructions

  1. Preheat Oven and Prepare Dish: Preheat your oven to 375°F (190°C). Lightly spray a 9×9-inch baking dish with nonstick cooking spray to prevent sticking, then set it aside while you prepare the filling.
  2. Mix the Peach Filling: In a medium-sized mixing bowl, combine the thawed peaches along with their juice. Sprinkle the granulated sugar and 4 tablespoons of all-purpose flour over the peaches. Stir thoroughly to coat the fruit evenly and break up any flour clumps until the mixture is smooth. Transfer this peach mixture to your prepared baking dish.
  3. Prepare the Crisp Topping: To make the crumbly topping, combine ¾ cup flour, dark brown sugar, and ground cinnamon. Using a pastry blender, food processor, or your hands, cut the cold cubed butter into the dry ingredients until the mixture resembles coarse crumbs—avoid over-blending to maintain a crumbly texture. If using a food processor, pulse briefly just to achieve this consistency.
  4. Add Oats and Top the Filling: Gently stir the rolled oats into the crumb mixture. Evenly sprinkle and spread the topping over the peach filling in the baking dish.
  5. Bake the Crisp: Place the baking dish in the preheated oven and bake for 45 to 50 minutes, or until the topping is golden brown and crisp. Remove from the oven and allow to cool slightly. Serve warm for the best flavor and texture.

Notes

  • Use thawed frozen peaches with juice to retain flavor and moisture.
  • Cold butter is key to achieving a crumbly, crispy topping.
  • Adjust sugar based on your peaches’ sweetness for a more or less sweet dessert.
  • For added flavor, consider a pinch of nutmeg or vanilla extract in the peach mixture.
  • Leftovers can be refrigerated and reheated gently before serving.
