Ingredients

Brownie Layer

  • 18 ounces brownie mix (such as Ghirardelli)
  • 1 large egg
  • ⅓ cup vegetable oil
  • ¼ cup water
  • 16 Oreo cookies

Cheesecake Layer

  • 8 ounces cream cheese, softened
  • ¼ cup granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 6 Oreo cookies, roughly chopped

Instructions

  1. Preheat and Prepare Pan: Preheat the oven to 350°F (175°C). Lightly coat a 9 x 9 inch baking pan with cooking spray and line it with parchment paper to ensure easy removal of the brownies.
  2. Mix Brownie Batter: In a mixing bowl, prepare the brownie batter according to package instructions by combining the brownie mix with 1 large egg, ⅓ cup vegetable oil, and ¼ cup water. Stir until smooth and fully combined.
  3. Layer Brownie Base and Oreos: Pour the brownie batter evenly into the prepared pan and spread it into a smooth, even layer. Place the 16 Oreo cookies on top of the batter, gently pressing them down to slightly embed into the batter.
  4. Prepare the Cheesecake Mixture: In a separate bowl, use an electric mixer to beat the softened cream cheese, granulated sugar, 1 large egg, and 1 teaspoon vanilla extract together until the mixture is smooth and creamy.
  5. Add Cheesecake Layer and Chopped Oreos: Pour the cheesecake mixture evenly over the Oreo-topped brownie base, leaving about a ½-inch border around the edges of the pan. Sprinkle the roughly chopped Oreos evenly on top of the cheesecake layer.
  6. Bake: Bake in the preheated oven for 35 to 40 minutes, or until the edges of the brownies start to pull away from the sides of the pan. If the cheesecake layer begins to brown too quickly, loosely cover the pan with aluminum foil to prevent over-browning.
  7. Cool and Chill: Remove from the oven and let the brownies cool completely on a wire rack for at least 2 hours. After cooling, cover the pan and refrigerate the brownies for an additional 2 hours to set before cutting and serving.

Notes

  • Make sure the cream cheese is softened to room temperature for a smoother cheesecake layer.
  • Using parchment paper helps with easy removal and clean cuts of the brownies.
  • For best texture, fully chill the brownies before slicing.
  • If you prefer, use gluten-free brownie mix to adapt for gluten sensitivity.
  • Store leftovers refrigerated and consume within 4-5 days.
