Ingredients

Egg White Mixture

  • 1/2 cup egg whites (from 4 to 5 extra large eggs, separated)
  • 1 teaspoon cream of tartar
  • 1/8 teaspoon salt
  • 1 teaspoon vanilla extract
  • 1 1/3 cups sugar
  • Green food coloring gel, quantity as needed to achieve bright green color

Chocolate Decoration

  • 1/3 to 1/2 cup melting chocolate (Chocolate almond bark or Bakers chocolate, approximately 2 1/2 – 3 squares)
  • Black food coloring gel, about 3 drops

Instructions

  1. Separate Eggs: Crack 4 to 5 extra large eggs into a glass measuring cup, carefully separating the egg whites from the yolks. Reserve the yolks in a separate dish for another use.
  2. Prepare Egg Whites: Pour the separated egg whites into the mixing bowl of a stand mixer. Add 1 teaspoon cream of tartar and 1/8 teaspoon salt. Mix on medium speed until many small bubbles form across the surface.
  3. Increase Speed: Increase mixer speed by one level for about one minute until more bubbles appear.
  4. Add Vanilla and Sugar: Turn off the mixer. Add 1 teaspoon vanilla extract and then add sugar two tablespoons at a time, mixing after each addition until all 1 1/3 cups sugar is incorporated and dissolved.
  5. Color the Meringue: Add green food coloring gel gradually until the meringue reaches a bright green hue to your liking.
  6. Whip to Stiff Peaks: On high speed, whisk the egg whites until thick, stiff, and glossy peaks form. This should take about 5 to 7 minutes.
  7. Pipe or Spoon Meringue: Transfer the meringue mixture into a piping bag with a large tip. Pipe the meringue onto a parchment paper-lined cookie sheet in swirling motions, coming to a peak. Alternatively, spoon tablespoons of meringue onto the parchment paper.
  8. Bake Low and Slow: Place the cookie sheet in a preheated oven at 250°F (120°C). Bake for 1 hour, then turn off the oven and leave the meringues inside for another hour with the oven door closed to dry thoroughly.
  9. Cool Completely: Remove the meringues from the oven and let them cool fully on the parchment-lined cookie sheet.
  10. Melt Chocolate: In a small microwave-safe bowl, melt 1/3 to 1/2 cup melting chocolate in the microwave. Heat for about 1 1/2 minutes, stirring every 10 to 15 seconds until smooth.
  11. Color Chocolate: Add about 3 drops of black food coloring gel to the melted chocolate and stir well to combine.
  12. Decorate Faces: Transfer the melted chocolate into a small plastic piping bag. Snip a tiny bit off the tip and pipe the eyes and mouth onto each cooled meringue to form whimsical faces, giving each cookie a unique character.

Notes

  • Use large extra-large eggs for best volume.
  • Ensure no yolk gets into the egg whites to achieve stiff peaks.
  • Be patient when baking at a low temperature for crisp, light meringues.
  • The meringues can be stored in an airtight container for several days.
  • Use gel food coloring for vibrant color without adding extra liquid.
  • Chocolate almond bark is an easy melting chocolate alternative but use any good quality melting chocolate available.
