Ingredients

Dough

  • 190g all-purpose flour
  • 150g Greek yogurt
  • 1 teaspoon baking soda
  • 4g salt (approximately ¾ teaspoon)

Filling

  • 2 tomatoes, sliced
  • mozzarella cheese, sliced (quantity as desired, approximately 100g)
  • lettuce to taste
  • 100g roasted turkey slices

Instructions

  1. Prepare the dough: In a large bowl, combine Greek yogurt, flour, a pinch of salt, and baking soda. Stir together initially with a spoon, then knead the mixture by hand until the dough is smooth and even. Cover it and allow it to rest for 30 minutes so it can rise slightly.
  2. Shape the flatbreads: After resting, divide the dough into small balls weighing 40-45 grams each. Use a rolling pin to roll each ball into a flat circle, ensuring the dough is not rolled too thin. Cover again and let the dough rest for another 30 minutes.
  3. Cook the flatbreads: Heat a large non-stick pan over medium-high heat. Place a dough circle in the hot pan and cook, flipping as soon as bubbles appear on the surface. Continue flipping several times until the flatbread is golden brown and puffy. Remove from the pan and let cool slightly.
  4. Create pocket and fill: Cut one side of the flatbread to form a pocket. Stuff each flatbread pocket with lettuce, tomato slices, mozzarella, and roasted turkey slices.
  5. Serve: Enjoy your quick, fresh flatbread sandwiches immediately while warm and soft.

Notes

  • The dough resting time is crucial for achieving softness and puffiness.
  • Do not roll the dough too thin to ensure it puffs up well in the pan.
  • You can substitute roasted turkey with other fillings like hummus, grilled vegetables, or falafel for a vegetarian option.
  • Cook flatbreads on medium-high heat to get good browning without burning.
  • Flatbreads are best enjoyed fresh but can be stored wrapped in foil for a day and gently reheated on a pan.
