Ingredients

Cheesecake Base

  • 300 g dry biscuits (graham crackers)
  • 150 g melted butter (3/4 cup)

Filling

  • 8 g gelatin
  • 300 ml whipping cream (1 1/4 cups)
  • 800 g cream cheese (3 1/2 cups)
  • 60 g powdered sugar (1/2 cup)
  • Zest and juice of 1 lemon

Lemon Syrup Topping

  • 140 ml water (1/2 cup)
  • 90 ml lemon juice (1/2 cup)
  • 80 g sugar (1/2 cup)
  • 15 g cornstarch (1/4 cup)

Instructions

  1. Prepare the Cheesecake Base: Add the graham crackers to a food processor and process for about a minute until finely ground. Transfer the crushed cookies into a bowl.
  2. Mix Base Ingredients: Add the melted butter to the crushed graham crackers and mix well to combine.
  3. Form the Crust: Pour the graham cracker mixture into a 24-cm diameter pan and spread evenly over the bottom, pressing it to form a compact and smooth base about 2 inches thick. Refrigerate for at least 15 minutes to set.
  4. Soak Gelatin: Place the gelatin sheets in cold water to soften while you prepare the filling.
  5. Whip the Cream: Using a mixer, whip the whipping cream until soft peaks form, then set aside.
  6. Make the Cream Cheese Mixture: In a bowl, combine cream cheese and powdered sugar. Add the lemon zest and beat the mixture until well blended.
  7. Incorporate Whipped Cream: Gently fold the whipped cream into the cream cheese mixture, scraping down the sides and mixing with an electric mixer for uniform consistency.
  8. Melt the Gelatin: In a small saucepan, pour the lemon juice and add the softened gelatin. Heat gently, allowing it to melt smoothly; remove from heat once melted.
  9. Combine Gelatin with Filling: Pour the warm gelatin mixture into the cream cheese bowl and mix thoroughly until fully incorporated.
  10. Assemble Cheesecake: Pour the cream cheese filling over the prepared graham cracker crust and smooth the surface with a spatula or spoon. Refrigerate for 3 hours to set.
  11. Prepare Lemon Syrup Topping: In a saucepan, combine water, lemon juice, and sugar. Whisk in the cornstarch until smooth.
  12. Cook Lemon Syrup: Heat the mixture over medium heat, stirring continuously for 4-5 minutes until it thickens. Remove from heat and allow it to cool.
  13. Add Topping: Remove the set cheesecake from the refrigerator and pour the cooled lemon syrup evenly over the top.
  14. Chill to Set: Return the cheesecake to the fridge for 30 minutes to allow the syrup topping to firm up.
  15. Garnish and Serve: Once firm, carefully loosen the cheesecake from the pan. Garnish with thin lemon slices. Slice the cheesecake using a warm knife for clean cuts and serve immediately. Enjoy!

Notes

  • Ensure the gelatin is fully dissolved to avoid lumps in the filling.
  • For a sharper lemon flavor, adjust the amount of zest and juice according to taste.
  • Use a warm knife when slicing to create smooth, clean slices without cracking.
  • The cheesecake should be stored refrigerated and enjoyed within 3 days for optimal freshness.
  • Allow the lemon syrup topping to cool completely before pouring to prevent melting the filling.
