Neiman Marcus Cake is a rich, gooey butter cake made with cake mix and a creamy cream cheese topping that melts in every bite.
1 (15.25-ounce) package yellow cake mix
4 large eggs, divided
1/2 cup butter, melted
1 teaspoon vanilla extract
3½ cups confectioners’ sugar
8 ounces cream cheese, softened
Preheat oven to 350°F (175°C). Grease a 13×9-inch baking pan.
In a large bowl, combine yellow cake mix, 2 eggs, melted butter, and vanilla extract. Mix until fully combined. The batter will be thick and stiff.
Spread the batter evenly into the prepared baking pan. For easier spreading, lightly spray the back of a spatula with nonstick cooking spray.
In a separate bowl, beat together confectioners’ sugar, softened cream cheese, and the remaining 2 eggs until smooth and creamy.
Pour the cream cheese mixture evenly over the cake batter.
Bake for approximately 35 minutes, or until the edges are set and lightly golden while the center remains slightly jiggly.
Remove from the oven and allow the cake to cool completely before slicing. This helps create the signature gooey layers.
Do not overbake; the center should remain slightly soft for the classic gooey texture.
Some variations add vanilla extract to the cream cheese topping instead of the cake layer.
For extra flavor, sprinkle powdered sugar over the cooled cake before serving.
Store covered in the refrigerator for up to 5 days.
