Brownie Layer

Chocolate Pudding Layer

Instructions

  1. Preheat and Prepare Crust: Preheat the oven to 350°F. Spray a deep-dish 9-inch pie plate with non-stick baker’s spray and set aside.
  2. Make Oreo Crust: Add the OREO cookies to a food processor and pulse until fine crumbs form. With the processor running, slowly stream in the melted butter until the mixture resembles wet sand. Transfer to the pie dish and press firmly into the bottom and up the sides using the bottom of a measuring cup or glass for an even crust. Bake for 10 minutes and let cool slightly.
  3. Prepare Brownie Layer Chocolate: In a small saucepan over medium-low heat, melt 4 tablespoons butter and 4 ounces chopped semi-sweet chocolate, stirring until smooth. Remove from heat and cool 1-2 minutes.
  4. Mix Brownie Batter: In a large bowl, whisk together brown sugar, granulated sugar, eggs, canola oil, and vanilla extract until slightly frothy. Whisk in 2 tablespoons melted chocolate to temper the eggs, then slowly add remaining melted chocolate while whisking until smooth.   6. Make Chocolate Pudding Layer: Whisk egg yolks and cornstarch together to form a thick paste. Heat whole milk, heavy cream, and sugar in a saucepan over medium heat until sugar is dissolved and bubbles form around edges, but do not boil. Slowly temper egg yolk mixture by whisking in about ⅓ cup warm milk, then pour mixture back into saucepan. Cook for 1-1½ minutes until thick enough to coat a spoon.
  7. Finish Pudding: Remove from heat and whisk in chopped chocolate, butter, and vanilla until smooth. Strain through a mesh sieve to remove lumps and pour evenly over the cooled brownie layer. Cover tightly with plastic wrap pressed onto pudding and refrigerate for 3 to 3½ hours until set.
  8. Prepare Whipped Topping: Using a handheld mixer, beat cold heavy cream, powdered sugar, and white chocolate instant pudding on low speed gradually increasing to high for 3-4 minutes until stiff peaks form.
  9. Assemble and Garnish: Spread whipped topping evenly over chilled pudding layer without mixing layers. Sprinkle with finely crushed Oreo crumbs and semi-sweet chocolate shavings. Refrigerate additional 30-60 minutes to firm whipped topping before slicing and serving.
