  • 7 ounces marshmallow fluff (Jet-Puffed brand recommended, 198g)

Instructions

  1. Beat the Butter: In the bowl of your stand mixer fitted with a wire whisk, or a medium mixing bowl with a handheld mixer, beat the slightly softened butter on high speed until fluffy and pale yellow, about 3 minutes. Remember to scrape down the sides of the bowl during mixing.
  2. Add Powdered Sugar: Lower mixer speed to low and add the sifted powdered sugar ½ cup at a time, beating well after each addition and scraping down the bowl sides. After all powder is incorporated, raise speed to high and beat until smooth and fluffy, about 2½ to 3 minutes.
  3. Mix in Vanilla Extract: Reduce mixer speed to medium, add vanilla extract, and mix just until no streaks remain.
  4. Incorporate Marshmallow Fluff: Add all marshmallow fluff, scraping container to get it all. Mix on medium speed until just combined, then increase speed to high and beat for 3-4 minutes until frosting is light, fluffy, and no longer sticky.
  5. Store and Use: Store frosting covered in the refrigerator until ready to use. Before frosting, let it sit at room temperature for a few minutes, then transfer to a piping bag with your preferred tip. For longer storage, freeze up to 3 months; thaw overnight in refrigerator and remix on high speed to re-lighten before using.
