  • 1/2 cup Heavy Cream
  • 1/4 cup Sundried Tomatoes (chopped)
  • 1/3 cup Freshly Grated Parmesan Cheese
  • Fresh Basil (for garnish)
  • Sea salt and cracked pepper (to taste)

Instructions

  1. Season and sear: Generously season the chicken breasts on both sides with sea salt and cracked pepper. Heat the sun-dried tomato olive oil in a large skillet over medium-high heat. Place the chicken in the skillet and sear without moving for about 5 minutes on each side until nicely browned and the chicken naturally releases from the pan. Remove the chicken and set aside.
  2. Build the aromatics: Lower the heat to medium. In the same skillet, add the minced garlic and chopped sun-dried tomatoes. Cook for 1 minute, stirring constantly to release the garlic’s fragrance without browning it.
  3. Deglaze and build the sauce: Pour in the chicken broth and use a spatula to scrape up any browned bits stuck to the bottom of the skillet. Add the heavy cream, freshly grated Parmesan cheese, thyme, and red pepper flakes. Stir the mixture well and reduce the heat to low, allowing the sauce to gently simmer and thicken.
  4. Return the chicken and finish: Nestle the seared chicken breasts back into the creamy sauce. Spoon sauce over the top to coat thoroughly. Cook on low heat for about 5 minutes, or until the internal temperature of the chicken reaches 165°F (74°C) and it is cooked through. Garnish with fresh basil leaves before serving.
