Ingredients

For the Chicken Marinade

  • 1 chicken breast
  • 1 Tablespoon Worcestershire sauce
  • 2 Tablespoons olive oil
  • 1 Tablespoon lemon juice

  • 1/2 large mango, diced
  • 1 cup lettuce leaves, chopped
  • 1/2 large avocado
  • 1/2 medium red onion, cut into strips
  • 1 sprig cherry tomatoes (45 pieces), halved or quartered
  • 2 Tablespoons pine nuts
  • 1 Tablespoon lemon juice
  • 2 Tablespoons olive oil
  • 45 sprigs cilantro, finely chopped

Instructions

  1. Marinate the Chicken: In a plastic bag, combine Worcestershire sauce, olive oil, lemon juice, salt, and pepper. Add the chicken breast to the bag, ensuring it is fully coated with the marinade. Seal the bag and let it marinate for 15 minutes in the refrigerator.
  2. Cook the Chicken: Remove the chicken from the marinade and pat it dry. Heat a dry frying pan over low heat and lightly spray with oil if desired. Place the chicken breast in the pan and cook for 6-7 minutes on one side. Flip the chicken, cover with a lid, and cook for another 5-6 minutes until fully cooked through.
  3. Prepare the Salad Ingredients: On a large plate, spread the chopped lettuce leaves. Top with diced mango and red onion strips. Peel and cube the avocado after removing the pit. Halve or quarter the cherry tomatoes and add them to the plate alongside the avocado cubes.
  4. Assemble the Salad: Slice the cooked chicken breast very thinly and place the slices into a salad bowl. In a small bowl, whisk together lemon juice, olive oil, and finely chopped cilantro. Drizzle this dressing over the salad and garnish with pine nuts before serving.
