Ingredients

Chicken and Seasoning

  • 1 Tablespoon olive oil
  • 2 medium chicken breasts (approx. 10 oz each)
  • ¼ teaspoon salt
  • ¼ teaspoon ground pepper
  • ½ teaspoon onion powder
  • 1 Tablespoon minced garlic

Sauce and Gnocchi

  • ¾ cup water (177 mL)
  • ¾ cup milk (177 mL)
  • 1 teaspoon chicken bouillon
  • 2 Tablespoons all purpose flour
  • 1 lb potato gnocchi
  • ½ lemon (2 Tablespoons juice and zest)
  • ¾ cup fresh grated parmesan
  • 12 Tablespoons fresh basil for garnish

Instructions

  1. Prepare and Season Chicken: Heat olive oil in a large pot over medium heat for 2 minutes. Cut chicken breasts into 4 strips each, then season both sides with salt, pepper, and onion powder.
  2. Sear Chicken and Cook Garlic: Place chicken strips in the pot and sear for about 3 minutes on each side until golden brown. Add minced garlic and cook for about 30 seconds until fragrant, stirring to avoid burning.
  3. Prepare Sauce Mixture: While the chicken cooks, whisk together water, milk, chicken bouillon, and flour in a bowl until smooth and well combined. This will be the base of your lemon parmesan sauce.
  4. Combine Ingredients: To the pot with chicken and garlic, slowly pour in the sauce mixture and add the potato gnocchi. Stir gently to combine all ingredients evenly.
  5. Simmer Until Done: Bring the mixture to a simmer and cook for 5-7 minutes, stirring occasionally, until the sauce thickens, gnocchi softens, and chicken reaches an internal temperature of 165℉ (74℃).
  6. Add Finishing Touches: Stir in the fresh grated parmesan cheese along with the lemon juice and lemon zest. Mix thoroughly to ensure the sauce is creamy and evenly flavored.
  7. Garnish and Serve: Remove from heat, garnish with fresh basil leaves and extra parmesan if desired, and serve hot for a delightful meal.

Notes

  • For best texture, use fresh potato gnocchi rather than frozen.
  • Ensure chicken is cooked to an internal temperature of 165℉ to guarantee safety.
  • Adjust seasoning with additional salt and pepper to taste after cooking if needed.
  • If sauce is too thick, add a splash of milk or water to reach desired consistency.
  • Fresh basil can be substituted with parsley if basil is not available.
