Ingredients

Chicken and Seasoning

  • 1 Tablespoon olive oil
  • 2 medium chicken breasts (approx. 10 oz each)
  • ¼ teaspoon salt
  • ¼ teaspoon ground pepper
  • ½ teaspoon onion powder
  • 1 Tablespoon minced garlic

Sauce and Gnocchi

  • ¾ cup water (177 mL)
  • ¾ cup milk (177 mL)
  • 1 teaspoon chicken bouillon
  • 2 Tablespoons all-purpose flour
  • 1 lb potato gnocchi
  • ½ lemon (2 Tablespoons juice and zest)
  • ¾ cup fresh grated parmesan
  • 12 Tablespoons fresh basil for garnish

Instructions

  1. Prepare and season chicken: Cut the chicken breasts into 4 strips each and season both sides with salt, pepper, and onion powder to evenly coat the chicken strips.
  2. Sear chicken and garlic: Heat olive oil in a large pot over medium heat for 2 minutes. Add the chicken strips and sear for about 3 minutes on each side until golden brown. Add minced garlic during the last 30 seconds of searing and sauté until fragrant.
  3. Prepare sauce mixture: While the chicken cooks, whisk together water, milk, chicken bouillon, and all-purpose flour in a bowl until smooth and free of lumps.
  4. Add sauce and gnocchi: Pour the prepared liquid mixture into the pot with the chicken and garlic. Add the potato gnocchi to the pot.
  5. Simmer to cook: Bring the mixture to a gentle simmer, stirring occasionally. Cook for 5-7 minutes until the sauce thickens, the gnocchi is tender, and the chicken reaches an internal temperature of 165℉.
  6. Finish with cheese and lemon: Stir in the freshly grated parmesan cheese, lemon juice, and lemon zest until well combined and creamy.
  7. Garnish and serve: Remove from heat and garnish with fresh basil and additional parmesan cheese if desired. Serve hot for a comforting meal.

Notes

  • Ensure chicken is fully cooked to 165℉ to guarantee food safety.
  • You can substitute chicken bouillon with low-sodium chicken broth for a less concentrated flavor.
  • Freshly grated parmesan cheese enhances the creaminess and flavor more than pre-grated varieties.
  • Adjust lemon juice to taste for more or less tang.
  • For a vegetarian version, omit chicken and use vegetable broth instead of chicken bouillon, and consider adding vegetables like mushrooms or spinach.
