Ingredients

Onion Rings

2 large yellow onions, cut into rings

1 1/2 cups almond flour

1/2 cup grated Parmesan cheese

1 teaspoon paprika

1/2 teaspoon garlic powder

1/2 teaspoon onion powder

1/2 teaspoon salt

1/4 teaspoon black pepper

2 large eggs

Cooking oil for frying (e.g., avocado oil)

Instructions

In a bowl, combine almond flour, Parmesan, paprika, garlic powder, onion powder, salt, and black pepper to make the coating mixture.

In another bowl, beat the eggs.

Dip onion rings into the eggs, letting excess drip off, then coat in the almond flour mixture.

Place coated onion rings on a plate or baking sheet while oil heats.

Heat oil in a skillet to 350°F (175°C).

Fry onion rings in batches, 2–3 minutes per side, until golden brown and crispy.

Remove with a slotted spoon and place on paper towels to drain excess oil.

Serve hot with your favorite low-carb dipping sauce.
