Ingredients

Chocolate Pudding Mixture

  • 1 (3.9 oz) instant chocolate pudding mix
  • 1 Tablespoon unsweetened cocoa powder
  • 1 cup half-and-half
  • 8 oz Cool Whip (half of 16 oz, thawed)
  • ½ cup rainbow sprinkles

Other Ingredients

  • 16 oz Cool Whip (thawed and divided)
  • 19 vanilla ice cream sandwiches (regular size)
  • ½ cup hot fudge topping (at room temperature, do not warm up, divided)
  • Optional toppings: additional sprinkles, M&Ms, chopped-up candy bars, caramel sauce, chocolate sauce

Instructions

  1. Prepare the Pan: Line a 9 x 13 inch baking dish with parchment paper to prevent sticking and for easy removal later. Set it aside.
  2. Make Chocolate Pudding Mixture: In a medium bowl, whisk together the instant chocolate pudding mix and unsweetened cocoa powder. Add the half-and-half and stir until the mixture thickens. Fold in half of the Cool Whip (8 ounces) and the rainbow sprinkles gently to combine.
  3. Layer Ice Cream Sandwiches: Arrange a single, even layer of the vanilla ice cream sandwiches on the bottom of the prepared dish. Trim sandwiches as needed to cover fully without large gaps. Approximately 2 rows of 4 sandwiches and one and one-third sandwiches at the top will fit.
  4. Spread Hot Fudge: Spoon ¼ cup of the room temperature hot fudge topping evenly over the layer of ice cream sandwiches.
  5. Add Chocolate Mixture: Spread the chocolate pudding and Cool Whip mixture evenly over the fudge layer.
  6. Freeze to Set: Place the dish in the freezer for at least 20 minutes to help the sandwiches support the next layers and prevent sinking.
  7. Repeat Layers: Remove from the freezer and add a second layer of ice cream sandwiches followed by the remaining hot fudge sauce spread evenly on top.
  8. Top with Cool Whip: Spread the remaining Cool Whip over the final fudge layer smoothly to create a creamy, soft topping.
  9. Freeze Until Firm: Freeze the entire cake for at least 2 hours until fully firm and set.
  10. Add Final Toppings and Serve: Before serving, decorate the top with additional sprinkles and any other desired toppings like chopped candy bars, M&Ms, caramel drizzle, or chocolate sauce. Slice and serve immediately for a delicious frozen treat.

Notes

  • Ensure hot fudge topping is at room temperature so it spreads easily without melting the ice cream sandwiches.
  • You can customize the toppings with your favorite candies and sauces for added flavor and texture.
  • Use parchment paper to make removing the cake from the dish quick and easy.
  • Keep the assembled cake well-covered in the freezer to prevent ice crystals and freezer burn.
  • Allow slices to sit for a few minutes at room temperature before serving for easier cutting if too hard.
