Ingredients

Halloumi and Hot Honey Sauce

  • 2 Packages Halloumi
  • 2 Tablespoons Olive Oil (for frying halloumi)
  • Salt & Pepper (to taste)
  • ¼ Cup Olive Oil (for hot honey sauce)
  • 2 Tablespoons Honey
  • 1 Tablespoon Dijon Mustard
  • ½ Teaspoon Chili Flakes
  • ½ Lemon (zested and juiced)
  • Few Sprigs Fresh Thyme
  • Salt & Pepper (to taste)

Roasted Chickpeas

  • 1 Can Chickpeas (drained and rinsed)
  • 1 Tablespoon Olive Oil
  • 1 Tablespoon Garlic Powder
  • 1 Tablespoon Onion Powder
  • 1 Teaspoon Cumin
  • Salt & Pepper (to taste)

Roasted Sweet Potatoes

  • 2 Small Sweet Potatoes
  • 1 Tablespoon Olive Oil
  • 1 Tablespoon Paprika
  • 1 Tablespoon Garlic Powder
  • 1 Tablespoon Onion Powder
  • Salt (to taste)

Couscous and Herb Mix

  • 1 Cup Couscous (dry)
  • 1 Handful Mint (chopped)
  • 1 Handful Parsley (chopped)
  • 1 Handful Dill (chopped)
  • 1 Handful Basil (chopped)
  • Olive Oil (to taste)
  • 1 Lemon (zested and juiced)
  • Salt & Pepper (to taste)

Quick-Pickled Red Onions

  • 1 Red Onion (thinly sliced)
  • ¼ Cup Apple Cider Vinegar
  • ¼ Cup Water
  • 1 Pinch Salt
  • 1 Tablespoon Honey

Toppings and Garnishes

  • ½ Cucumber (sliced)
  • ½ Red Onion (thinly sliced)
  • Salt & Pepper (to taste)
  • 1 Squeeze Lemon
  • ⅓ Cup Pomegranate Seeds
  • Fresh Parsley (chopped, for garnish)

Instructions

  1. Roast the Sweet Potatoes: Preheat your oven to 420°F (215°C). Peel and cube the sweet potatoes, then toss them with olive oil, paprika, garlic powder, onion powder, salt, and pepper. Spread them out evenly on a baking sheet. Roast for 20–25 minutes, turning halfway through to ensure even browning.
  2. Prepare and Roast Chickpeas: While the sweet potatoes roast, drain and rinse the chickpeas. Toss them with olive oil, garlic powder, onion powder, cumin, salt, and pepper. After the sweet potatoes have roasted for about 25 minutes, add the chickpeas to the same baking sheet or a separate one if needed. Continue roasting both for an additional 20–25 minutes until the chickpeas are crispy and sweet potatoes are nicely browned.
  3. Make Quick-Pickled Red Onions: Thinly slice a red onion and place it in a jar or bowl. Combine apple cider vinegar, water, honey, and a pinch of salt, then pour over the onions. Toss to coat, cover, and refrigerate for at least 25–30 minutes until softened and slightly pink. These can be used immediately or kept in the fridge for up to a week.
  4. Prepare the Hot Honey Vinaigrette: In a small bowl, whisk together olive oil, honey, chili flakes, fresh thyme leaves, salt, and pepper. Set aside half of this mixture to use later as the hot honey glaze for the halloumi. To the remaining half, add Dijon mustard, lemon zest, and lemon juice, and whisk again to create the hot honey Dijon vinaigrette. Taste and adjust seasoning as needed.
  5. Cook the Halloumi: Heat olive oil in a large skillet over medium heat. Add the halloumi slices and cook for about 2–3 minutes per side until golden and crispy. Remove from heat and immediately drizzle or brush with the reserved hot honey sauce to glaze the cheese.
  6. Prepare the Couscous: Cook the couscous according to the package directions. Once cooked and warm, fluff with a fork and stir in the chopped mint, parsley, dill, and basil along with olive oil, lemon zest, lemon juice, and salt and pepper. Adjust seasonings to your liking.
  7. Assemble the Bowls: Divide the herbed couscous into serving bowls. Top each with the roasted sweet potatoes, crispy chickpeas, hot honey glazed halloumi, sliced cucumber, quick-pickled red onions, and pomegranate seeds. Drizzle generously with the hot honey Dijon vinaigrette. Finish with a squeeze of fresh lemon, extra chopped parsley, and additional salt and pepper if desired. Serve immediately.
