Ingredients

Hot Honey Chicken

  • 3 tbsp (45g) hot honey
  • 2 tbsp (30ml) olive oil
  • 2 cloves garlic, minced
  • 1 tbsp (15ml) soy sauce or tamari
  • 1 tsp (2g) smoked paprika (or regular paprika)
  • ½ tsp chili flakes (optional, for extra heat)
  • Juice of ½ lemon (15ml)
  • Salt and freshly ground black pepper, to taste
  • 34 (500-600g) chicken thighs (boneless, skinless)

Garlic Sauce

  • 150g natural Greek yoghurt (⅔ cup)
  • 2 tbsp mayonnaise (30ml)
  • 2 garlic cloves, minced
  • 1 tsp Dijon mustard (5ml)
  • ½ tsp smoked paprika (2g)
  • Salt to taste

Assembly

  • 4 flatbreads or wraps
  • 1 small cos lettuce, shredded
  • ½ cucumber, halved & thinly sliced
  • ½ cup pickled red onions (store-bought or quick pickle)

Instructions

  1. Marinate the chicken: In a bowl, whisk together hot honey, olive oil, garlic, soy sauce, paprika, chili flakes (if using), and lemon juice. Season the chicken thighs with salt and pepper, then coat them thoroughly in the marinade. Cover and refrigerate for at least 30 minutes, ideally 2–4 hours, allowing the flavors to deeply infuse.
  2. Prepare the garlic yoghurt sauce: In a small bowl, combine the natural Greek yoghurt, mayonnaise, minced garlic, Dijon mustard, smoked paprika, and salt. Mix well, cover, and chill until ready to serve to let the flavors meld.
  3. Cook the chicken: Heat a grill pan or skillet over medium-high heat (or prepare a barbecue at medium-high heat). Cook the marinated chicken thighs for 4–5 minutes per side until cooked through and slightly charred. Remove the chicken and let it rest for 5 minutes before slicing thinly to retain juiciness.
  4. Warm the flatbreads: Gently warm the flatbreads in a dry pan or oven until soft and pliable, making assembly easier and enhancing flavor.
  5. Assemble the flatbreads: Spread a generous layer of the garlic yoghurt sauce over each warm flatbread. Layer with shredded cos lettuce, thinly sliced cucumber, pickled red onions, and the sliced hot honey chicken. Drizzle extra garlic sauce on top if desired, fold the flatbreads, and serve immediately for a fresh, flavor-packed meal.
